A comforting, velvety pasta dish featuring tender mushrooms and a luscious cream sauce—all made in one pot for easy cleanup.

This creamy mushroom pasta quickly became a favorite in my household for its rich flavors and simple preparation.

Ingredients

  • Pasta & Dairy: 350 g (12 oz) fettuccine or linguine uncooked , 200 ml (3/4 cup + 2 tbsp) heavy cream , 50 g (1/2 cup) grated Parmesan cheese , 2 tbsp unsalted butter
  • Vegetables: 400 g (14 oz) mixed mushrooms (cremini , button , shiitake) sliced , 1 medium yellow onion finely chopped , 3 cloves garlic minced , 2 tbsp fresh parsley chopped (plus extra for garnish)
  • Liquids: 700 ml (3 cups) vegetable broth , 100 ml (1/3 cup + 1 tbsp) dry white wine (optional)
  • Seasonings: 1/2 tsp sea salt or to taste , 1/4 tsp black pepper or to taste , 1/2 tsp dried thyme or Italian herbs , Pinch of red pepper flakes (optional)

Instructions

Step 1:
In a large , deep skillet or Dutch oven melt the butter over medium heat. Add onions and cook for 2 3 minutes until softened.
Step 2:
Stir in the garlic and cook for 30 seconds until fragrant.
Step 3:
Add the sliced mushrooms and sauté for 4 5 minutes until they release moisture and begin to brown.
Step 4:
Pour in the white wine (if using) and cook for 2 minutes letting it reduce slightly.
Step 5:
Add the uncooked pasta , vegetable broth , cream , salt , pepper , dried thyme , and red pepper flakes. Stir to combine and bring to a gentle boil.
Step 6:
Reduce heat to medium low. Simmer uncovered for 10 12 minutes , stirring occasionally , until the pasta is al dente and the sauce is creamy (add a splash more broth if needed).
Step 7:
Stir in Parmesan cheese and chopped parsley. Adjust seasoning to taste.
Step 8:
Serve immediately , garnished with extra parsley and Parmesan if desired.
