Ingredients
- Pasta & Dairy: 350 g (12 oz) fettuccine or linguine uncooked , 200 ml (3/4 cup + 2 tbsp) heavy cream , 50 g (1/2 cup) grated Parmesan cheese , 2 tbsp unsalted butter
- Vegetables: 400 g (14 oz) mixed mushrooms (cremini , button , shiitake) sliced , 1 medium yellow onion finely chopped , 3 cloves garlic minced , 2 tbsp fresh parsley chopped (plus extra for garnish)
- Liquids: 700 ml (3 cups) vegetable broth , 100 ml (1/3 cup + 1 tbsp) dry white wine (optional)
- Seasonings: 1/2 tsp sea salt or to taste , 1/4 tsp black pepper or to taste , 1/2 tsp dried thyme or Italian herbs , Pinch of red pepper flakes (optional)
Instructions
- Step 1:
- In a large , deep skillet or Dutch oven melt the butter over medium heat. Add onions and cook for 2 3 minutes until softened.

- Step 7:
- Stir in Parmesan cheese and chopped parsley. Adjust seasoning to taste.
- Step 8:
- Serve immediately , garnished with extra parsley and Parmesan if desired.
