11 - 1/4 teaspoon black pepper

→ Optional Toppings

12 - 4 large eggs
13 - 1/4 cup feta cheese, crumbled
14 - 2 tablespoons fresh cilantro or parsley, chopped

# How to make it:

01 - Preheat oven to 425°F. Line a large sheet pan with parchment paper.
02 - In a large bowl, combine diced sweet potatoes, red bell pepper, and red onion. Drizzle with olive oil and sprinkle with smoked paprika, cumin, garlic powder, salt, and black pepper. Toss well to coat evenly.
03 - Spread seasoned vegetables evenly on prepared sheet pan. Roast for 20 minutes, stirring halfway through cooking.
04 - Remove pan from oven. Add orange segments and baby spinach, stirring gently to combine with roasted vegetables.
05 - If using eggs, create 4 small wells among vegetables and crack one egg into each well.
06 - Return pan to oven and roast for an additional 8 to 10 minutes until sweet potatoes are tender and eggs are cooked to desired doneness.
07 - Remove from oven. Sprinkle with feta cheese and fresh herbs before serving.

# Expert Advice:

01 -
  • Everything cooks on one sheet pan, which means one less dish to clean and more time with your coffee.
  • The sweet potatoes get caramelized edges while the oranges add brightness that feels like sunshine on your plate.
  • It's flexible enough to feed vegetarians and meat-eaters at the same table without fussing.
02 -
  • Add the oranges and spinach near the end—if they roast the whole time, the oranges dry out and the spinach turns into nothing.
  • Cut your sweet potatoes into fairly uniform pieces so they roast at the same rate; uneven sizes means some get mushy while others stay firm.
03 -
  • Don't stir too much during the first 20 minutes of roasting—letting vegetables sit still helps them develop those beautiful caramelized edges that add depth to the flavor.
  • If you're not a fan of eggs, crumbled goat cheese or a drizzle of tahini makes an equally delicious topping that feels special without the cooking fuss.
