11 - 2 tablespoons Cajun seasoning
12 - Salt and black pepper, to taste
13 - Sliced green onions or chives, for garnish
14 - Optional: shredded cheese, crispy bacon bits, sour cream, chopped fresh parsley

# How to make it:

01 - Dice potatoes, chop onions, bell peppers, and celery, mince garlic. Slice andouille sausage into bite-sized rounds.
02 - In a large pot, heat butter and olive oil over medium heat. Add andouille sausage and brown for 3-4 minutes until fragrant. Remove sausage and set aside.
03 - To the same pot, add onions, bell peppers, and celery. Sauté for 5-7 minutes until softened. Stir in garlic and cook for 30 seconds until fragrant.
04 - Return sausage to the pot. Sprinkle in Cajun seasoning and stir to coat all ingredients.
05 - Add diced potatoes and chicken broth. Bring to a boil, then reduce heat and simmer uncovered for 15-20 minutes, or until potatoes are tender.
06 - Use an immersion blender to partially puree the soup in the pot, leaving some potato chunks. Alternatively, transfer a portion to a blender, blend until smooth, and return to pot.
07 - Stir in heavy cream or half and half. Warm gently over low heat without bringing to a boil. Adjust seasoning with salt, pepper, or additional Cajun spice as desired.
08 - Ladle into bowls and garnish with green onions or chives. Add optional toppings such as shredded cheese, crispy bacon, sour cream, or parsley if desired.

# Expert Advice:

01 -
  • It comes together in one pot, which means less cleanup and more time on the couch.
  • The Cajun seasoning builds layers of flavor without you having to measure out ten different spices.
  • You can control the heat level, making it perfect for both spice lovers and the spice-averse.
02 -
  • I learned the hard way that boiling cream makes it separate into weird little curdled bits. Keep it at a gentle simmer once dairy joins the party.
  • Browning the sausage well isn't optional, that caramelization is where half the flavor lives.
03 -
  • Start with half the Cajun seasoning and add more gradually, you can always add heat but you can't take it away.
  • If you want extra smoky flavor, add a teaspoon of smoked paprika along with the Cajun seasoning.
